Hibachi Grill to Fill Presque Isle Mall's Ruby Tuesday Space
Mall owner Dana Cassidy says kitchen renovations are underway for Shogun's move; Ruby Tuesday's exit leaves Waterville as the chain's last Maine restaurant.
Shogun Japanese Restaurant is relocating to the Aroostook Centre Mall in Presque Isle, taking over the space vacated when Ruby Tuesday closed, the Bangor Daily News reported.
Mall owner Dana Cassidy said work to convert the kitchen is already in progress. Hibachi cooking calls for new hoods and exhaust systems, different equipment and a reworked dining layout. Cassidy said he is using local contractors and has not set an opening date, though he hopes the restaurant can be running in a few weeks.
Shogun launched in 2025 across the street at the Stone Ridge Event Center, a 23,000-square-foot building Cassidy also owns that is now under contract to a buyer he has not named. Personal Services of Aroostook, which supports people with intellectual disabilities and autism, also operates there and is looking for a new space.
The restaurant employs at least 10 people on a typical day, including three chefs, and all are expected to move with it.
Cassidy bought the mall in 2023 and has focused on filling it with local businesses. He said it now has 36 or 37 tenants, up from 15 when he took over. The Ruby Tuesday closure left Waterville as the chain's last Maine location.
"We're doing very well for what we have to work with," Cassidy said of the mall.
